Where its people with patience, dedication and effort each year bring us to our oil mill one of the most important products of our Mediterranean diet and thus our Extra Virgin Olive Oil is born “HACIENDA LA LAGUNA”.
When we begin to grind our green olives in our Almazara we discover how the oil begins to form with intense green colors full of light, herbaceous, bitter and slightly spicy flavors, in turn fruity that concentrate to give intense aromas of tomato, banana, apple, others like artichoke, green grass and so on, they slowly ripen more and more, until they reach that yellowish green color with sweet and unctuous flavor.
This Extra Virgin Olive Oil is the only Vegetable fat in the world that can be consumed without having to go through chemical processes, one could clearly say that we have before our eyes and in our hands 100% natural olive oil juice.
AROMA, FLAVOR, QUALITY, ESSENCE, LUXURY
OIL FACTORY
Our oil factory CORTIJO LA LABOR SL, where we make our oils, is located in the heart of the province of Jaén, strategically located very close to our farms where all our olives are milled, it is located on the national road that connects Baeza with Jaén in order to have quick access to all the logistics of the purchase of olives from our nearby neighbors, material supply, merchandise delivery, etc.
In our oil factory we have the most advanced means of cleaning, grinding and extracting oil and a warehouse for the storage of 6000 tons of oil.
We also have a large number of containers that we distribute for all our customers in order to carry out the porting of these olives to our oil factory.
Once our oils have been selected, we separate our highest quality oils, they go to our bottling plant where we first pack our early oils called PREMIUN and then our Virgin Extras AOVES with the trademark HACIENDA LA LAGUNA.
The rest of the worst quality oils with some impurities are sold in the national market to refineries that chemically process them and mix them to produce the so-called VIRGIN OIL.

At present, in our Hacienda la Laguna oil mill we produce four types of oils, two that we bottle and two that we sell for oil refineries.
EXTRA VIRGIN OIL TO THE PREMIUM LA LAGUNA
This oil is collected as soon as we detect that the fruit begins to ripen, where the olive is still in its original green color, following very exhaustive processes of collecting the fruit at no high temperatures, a gentle crushing without raising the friction temperature, a slow shake that gets the oil droplets out of their cells and join with the others at a temperature that does not exceed 27 ° so that the aromas are not lost and a horizontal centrifugal separation we finally obtain that high quality that we call PREMIUM .
